Vliv autolýzy kvasnic na složení vína

This work deals with the influence of yeast autolysis and their subsequent impact on the composition of still wines. The first chapter describes pre-fermentation maceration. The next chapter is the organisms participating in individual fermentations and their brief characteristics and systematic classification. The following are the vital abilities of these microorganisms and the compounds they produce. These substances are then described and characterized in detail in the following chapter. The following chapter deals with the autolysis of yeast, where this mechanism is described in detail, when the yeast dies. It then deals with the impact of aging on individual substances. The practical part characterizes in detail the varieties that were used in the experiment. The methodology and design of the experiment follow. The results part discusses the aspects we arrived at during analytical and sensory analyzes. Graphs with tables show how the wine matured and developed during vinification.

Determination of inorganic substances in sludges from sewage disposal plants

According to valid legislation inorganic substance determination will be analyzed in the sludges withdrawn from the Modrice sewage disposal plant. Based on gained results subsumption of the sludge into categories will be carried out and method of their use will be suggested.
