My bachelor thesis deals with spreadable meat products. The first part is mainly about technology of individual meat products, especially bakery cream, métský salami, pates, terrines, galantines and can. In this thesis is describe a meat as the main raw material for the production of meat products and also influences on meat quality. It also describes the distribution of meat products by the traditional method of cutting and distribution of meat products as indicated in Czech legislation Notice no. 69/2016. Spreadable meat products are not a special category of products indicated by the legislation, but there are special terms of use. Spreadable meat products are divided on fermented and cooked. In the second part of the thesis describes the hygiene, sanitary requirements on businesses and legal requirements for operations. Each enterprise must observe the principles of good hygiene and must do everything to adapt. I also deal with the system to ensure food safety HACCP and its explanation. This is related to the concepts of risks and hazard in food., which are also described. Hazard may be physical, chemical and biological.
Comparing care for children under three years of age in different types of equipment from a hygienic point of view

This bachelor thesis is focused on the matter of comparison of institutions that provide care for children up to three years of age. In theoretical part, there are concluded requirements for individual types of childcare facilities. There are included hygienic requirements for premises and operation, eating, number of children and caregivers. This comparison includes kindergartens, children's groups, forest kindergartens, facilities providing care for children up to three years of age in a daily regime, trade of care for children up to three years of age and children's corners. The objective of the thesis was to create a comparison in terms of hygienic requirements for premises and operation of individual types of facilities. Further, even an assessment of risks of eating and a comparison of educational activities. Research questions were connected with hygienic requirements for premises and operation, risks of eating and the comparison of educational activities. In practical part, there was used a qualitative research using a semi-structured interview with caregivers in the childcare facility, and also own observance of the given institution. The research group consisted of five childcare facilities in the South Bohemian Region - one kindergarten, one forest kindergarten, one children's corner and two children's groups. The facilities were selected randomly, and there were performed five interviews in total based on questions prepared in advance. Photographs of individual facilities were taken for their illustrative nature.
Hygienic problematics of forest kindergartens in comparison with classical kindergartens

This work, which is named "Hygienic problematics of forest kindergarten in comparison with classical kindergartens", is about differences between two types of preschool educational facilities. The theoretical part introduces with creation of classical and forest kindergartens, explains the importance of preschool educational facilities and the environment in childrens development, summarizes the current state of hygienic law regulations in the field of preschool education, summarizes hygienic requirements for places, service and catering, and last, but not least, points out health risks which are omnipresent. The aim of the work is comparison of classical and forest kindergartens in terms of their impact on health of children and their morbidity, as well as hygienic requirements for places, services, conditions and catering, and the comparison of differences in educational activities. The research questions are as follows: Does the type of kindergarten affect the health and morbidity of children? What are the hygienic risks of catering? Are the different hygienic conditions reflected in the service of kindergartens? What are the differences in educational activities? The research was conducted qualitatively with semistructured interview with teachers, and with observation in research file. The research file was composed of five kindergartens in the Pilsen Region three classical and two forest kindergartens (at that time forest clubs, which are planning to enter the school register and then, they'll be officially forest kindergarten). Those preschool facilities was randomly chosen. From the acquired interview data were created diagrams in categories, with using of methond called "paper and pencil", and individual subcategories were then verbally described and the answers of probands were compared. From the observing were, according to categories, verbally compared all of the researched facilities. The results show that the type of facility doesn't have any significant effect on the health and morbidity of children, but in case of some bigger trauma would be forest kindergartens in advantage thanks to handy first aid kit. Catering in forest kindergarten doesn't have sufficient legislative regulation and therefore there are unresolved questions about monitoring of nutritional recommendations, consumer basket and storage of childrens home made snacks. Forest kindergartens should be able to provide a daily catering for children, which consists of two snacks and a lunch, nonetheless, this is not the case of forest clubs, but after they enter the school register they'll have to fulfill that. Next thing that came out from the results is that there are large differences in area options of facilities, water supply, in hygienic equipment and in a way of securing of hygiene supplies. In terms of educational activities forest kindergartens are able to show children a manly part of education, on top of that they care about natural development of children and it's imagination, due to elementary natural materials. Moreover children in forest kindergartens spent three times more time outdoors that children in classical kindergartens.
Safety and protection of heath at work

My thesis titled Safety and protection of health at work deals with the issue of security protection on general level. Next part of the thesis is focused on school level and occupational safety and health in nursery school. My thesis consists of two parts. First theoretical part is made up literary recherche which contains general information, that were obtained from the study of literature. It is about concept definition, rights and obligations of employees and employers. After that is summary of information about the education and injures of children in nursery school. Secondary part is focused on practical examples. There are analyses of four specific nursery schools. First is the characteristic of the individual nursery schools, which aims to detected strengths and weaknesses. After that is a short standardized review with directors of the nursery schools, who have experiences with safety and health. Then it is compared with the current legislation and every nursery school will receive a proposal to eliminate the deficiencies. Closure of the thesis includes evaluation of the nursery schools.
Bathing of children in indoor swimming pools.

This diploma thesis deals with bathing children, especially infants and toddlers, in indoor swimming pools. It focuses primarily on the potential health and hygiene risks of this activity. It is divided into theoretical and practical part. The theoretical part provides a deeper insight into the field of artificial swimming pools, is dedicated to current as well as first ever legislation, in more detail is dedicated to the hygienic requirements for swimming pools according to Decree no. 238/2011, as amended; describes the process of pool water treatment, provides an overview of possible types of disinfecting pool water treatment and comparison within the advantages and disadvantages, describes indicators of water quality and their importance, and mostly focuses on hygienic and health risks in connection with the visit of indoor pools. Gives examples from practice (epidemic), mentions the most common sources of pollution including the most common violations of visitors. The theme of hygienic and health risks is then divided according to the origin of risk to the microbiological part (dedicated to infectious agents), to chemical part (disinfection by products) and to the part of accident risks and risks associated with the water temperature. The thesis is also keenly interested in the views of experts for bathing children, especially infants and toddlers, in indoor artificial pools. Research in the practical part was made by a qualitative method using secondary data analysis (operational and guest regulations, operational logbooks for 2015, the results of laboratory analysis of pool water for the 2015, laws and decrees), participant observation and interviews. The research was conducted in indoor swimming pools in towns Jihlava and Prachatice, which run swimming courses for infants and toddlers as well as for older children. For research, I set the following goals: C1: To monitor the microbiological and the physical-chemical indicators of the pool water quality in relation to Decree no. 238/2011 Coll., as amended, in pre-selected artificial indoor pools during annual operation. C2: To focus on the health status of children (infants and toddlers) in swimming classes. C3: To find out the knowledge and attitudes of visitors (parents) and trainers in the field of hygiene principles for swimming in artificial pools and risks arising from them. Based on the targets I have set the following research questions: V1: Are the monitored microbiological and physico-chemical water quality limits exceeded, and if so, which and under what circumstances? V2: What health problems, if they occured, did infants and toddlers after regular visits of indoor pools have ? V3: Are these children suffering from allergic diseases, and if so, from what type? V4: What knowledge and attitudes do visitors (parents) and lecturers in the field of hygienic principles for swimming in artificial pools and potential risks have? This thesis may serve the general public to extend the knowledge in the field of bathing (not only the children) in artificial pools and to give a view on this subject from different perspectives, as well as operators of swimming pools as an information material.
Chosen problems of consumer protection

The main objective of diploma work was to determine consumers' awareness of their rights in the field of catering services in the Central Region in the Czech Republic. Another task was to detect the critical areas which have the greatest difficulty to respondents. As part of the questionnaire survey, which took place in November 2008 in the Central Region were asked 97 respondents.
