Studium antioxidačních komponent u rosé vína odrůdy Laurot
Ehrenbergerová, Aneta
The literary part was focused on the antioxidant components occurring in wine. In the experiment was observed a content of selected antioxidant components in the sample of rose wine produced from interspecific variety Laurot. Total amount of phenolics, total of anthocyanins, total of flavanols, reducing power and antiradical aktivity were determined by spectrophotometry. Furthermore, phenolic acids, flavan-3-ols, stilbenes and flavonols were determined by high performance liquid chromatography. The results were compared with various studies and confirmed the hypothesis that Laurot variety is suitable for the production of rose and red wines, particularly for its high values of total phenols and subsequently antiradical activity, which appears to be beneficial to human health.
