Aditiva ve víně a možnosti jejich detekce

The objective of this Bachelor thesis is to describe food additives in wine and possibilities for their detection. This thesis was prepared at the Institute of postharvest technologies, Faculty of Horticulture in Lednice, on Mendel University in Brno in 2012 - 2014. In the individual chapters food additives, both permitted and prohibited by law, are described. It describes legislation, which regulates viticulture and winemaking, valid in the Czech Republic and in the European Union. Furthermore it describes selected analytical methods used for the detection of additives and inspecting the authenticity of wines.

The goal of this master thesis is to track the number of selected microorganism groups which tend to appear in grape berries and along the whole process of winemaking. In the theoretical part, specific phases of winemaking are described as well as some significant groups of microorganisms that take part in the vinification proces. This part also deals with the wine defects caused by undesirable microflora activity and further it explains how to avoid this situation, using an adequate sanitation in the wine cellars. The practical part is dedicated to the evaluation of the results obtained during the analysis of three wine varieties - Pálava, Veltlínské zelené and Rulandské modré. The analysis determine the total number of microorganisms, lactic acid bacteria, yeasts and molds.
