Bachelor thesis concerns with the issue of the quality of beef meat – influence of breed, sex, age, and way of breeding on the quality of beef meat. In this thesis the difference of meat quality in different breed is described. Meat quality is given by content of fat, marbling, color and viscosity of meat. Age of the animal affects sensory, technological and culinary properties and related content of fat, color of meat, viscosity and textural properties. chemical composition, pH, color, texture, tenderness of meat, viscosity, influence of breed, way of breeding, forerunner manipulation and carcass processing belong to the quality parameters of beef meat. The thesis is concerns by different methods of increased tenderness of meat – by electrical stimulation, hydrodynamic shock wave – pressure technology, ultrasound, high hydrostatic pressure, proteolytic enzyme and pre-rigor injection of ionic compounds.

Work deals with transport of animals for slaughter and its influence on the quality of meat. Summarizes the right ways of loading, unloading and manipulating with animals. Determinates the precise requirements for the means of transport and transport equipment. Includes the most used transportation by road and marginally used transport by rail and water. Mentions the most common causes of injuries, deaths and losses during transport. Points to the influence of manipulations with animals on the quality of the meat. The result of improper treatment of animals are meat defects DFD and PSE, witch are commonly caused by stress and exhaustion of energy reserves. Describes the basic defects of meat of slaughtered animals-bovine animals, pigs and chickens. Mentions the basic laboratory techniques for the detection of these abnormalities.

The Information System Development for the Protected Workshop

The object of this labor is to analyze of business processes and design an information system for support the cleaning services in sheltered workshops by Service Company s.r.o The result of this detailed analysis is the necessary basic for the design of an information system which respects the current model of the existing operations and also removes some of the shortcomings. Executed proposal also specifies the user access to the information system. Proposal defines the functions of modules, relationships and access to data. The proposal also specifies for all data flow and data warehouses. In the final stage is made a proposal of next action.

Tool for Risk Analysis Support in Information Security

The master thesis deals with the development of the tool for risk analysis support in information security. At first we perform a theoretical basis for security development of lifecycle process (SDL). Afterwards the theory of risk analysis based on fault tree analysis is described. Considering this knowledge base system was designed and implemented. Next chapter describes the best practice refer to the typical example of use and presents the potencial using of this tool in practice. Final chapter deals with the possibility of future expansion of this application.

The aim of this bachelor thesis is the design and implementation of an information system for chosen company from the service sector. Basic concepts from the field of information systems and software development are explained at the beginning. The core of the thesis consists in the design of the information system based on the analysis of the company and on the system requirements specification. The description of the implementation and used implementation tools follows, and the thesis ends with an evaluation of costs and benefits of the designed solution.
