Stabilní izotopy lehkých prvků v rostlinách fungují jako "přírodní otisk", odrážející jejich metabolismus, přírodní podmínky, ve kterých se vyskytují a reakce na tyto podmínky. Analýza stabilních izotopů lehkých prvků se v posledních letech stala hojně používaným nástrojem při autentizaci potravin. Pro ověření botanického původu cukrů se využívá rozdílné frakcionace stabilních izotopů uhlíku při fotosyntéze zdrojových plodin. Cílem této bakalářské práce je shrnout informace o stabilních izotopech uhlíku v rostlinách, jejich měření a využití při autentizaci potravin. V praktické části práce byl za využití metody hmotnostní spektrometrie izotopových poměrů ověřen botanický původ několika běžně prodávaných cukrů. Analýze bylo podrobeno několik řepných a třtinových cukrů společně s rostlinami cukrové třtiny a cukrové řepy. Porovnáním naměřených poměrů 13 C/12 C cukrů s poměry 13 C/12 C obou rostlin bylo ověřeno, že prodejní názvy cukrů odpovídají svým zdrojovým plodinám. Stable isotopes of light elements in plants serve as a "natural fingerprint," reflecting their metabolism, the natural conditions in which they occur, and their responses to those conditions. In recent years, the analysis of stable isotopes of light elements has become a widely used tool in food authentication processes. To verify the botanical origin of sugars, the different fractionation of stable carbon isotopes during photosynthesis in source plants is utilized. The aim of this bachelor's thesis is to summarize the information of stable carbon isotopes in plants, their measurement, and their use in food authentication. In the practical part of the thesis, the botanical origin of several commonly sold sugars was verified using isotope ratio mass spectrometry. Several beet and cane sugars were analysed, along with sugarcane and sugar beet plants. By comparing the measured 13 C/12 C ratios of the sugars with the 13 C/12 C ratios of both plants, it was verified that the label names of the sugars correspond to their source crops.
