Cíle práce: Cílem této práce je zjistit, zda u dospělé veganské populace v České republice dochází ke změnám v biomarkerech metabolismu železa během dvou let dodržování veganské stravy. Dílčími cíli je zhodnotit dietní příjem železa, jeho zdroje ve stravě a výskyt případných symptomů sideropenie nebo diagnostikované anémie. Metody: V rámci probíhající studie byla navržena tato diplomová práce jako prospektivní sledování dospělé veganské populace po dobu dvou let. Vstupními kritérii pro účastníky (n = 80) bylo dodržování veganské stravy po dobu minimálně dvou let a souhlas se sběrem dat. Data byla získávána prostřednictvím 3denních a 1denních jídelních záznamů a follow-up dotazníků po dvou letech studie, které hodnotily subjektivní příznaky nedostatku železa. Biochemické parametry, jako hemoglobin, ferritin, transferin, MCV, TIBC, CRP a kreatinin, byly analyzovány v akreditované laboratoři na začátku sledování a opět po dvou letech. Dietní záznamy byly zpracovány pomocí nutričního softwaru Nutrixo za použití validovaných databází složení potravin (FCD), což umožnilo analýzu příjmu mikroživin. Výsledky: Studie neprokázala statisticky významnou korelaci mezi dietárním příjmem železa a klíčovými biochemickými parametry zásobení železem, jako jsou sérový ferritin, hemoglobin a solubilní transferinový... Objectives: The aim of this thesis is to determine whether changes in iron metabolism biomarkers occur in the adult vegan population in the Czech Republic during two years of vegan diet adherence. Secondary objectives include evaluation of dietary iron intake, its food sources, and prevalence of potential sideropenia symptoms or diagnosed anemia. Methods: Within an ongoing study, this thesis was designed as a prospective two-year follow-up of adult vegans. Inclusion criteria for participants (n = 80) were adherence to vegan diet for at least two years and consent to data collection. Data were obtained through 3-day and 1-day dietary records and follow-up questionnaires after two years assessing subjective iron deficiency symptoms. Biochemical parameters including hemoglobin, ferritin, transferrin, MCV, TIBC, CRP, and creatinine were analyzed in an accredited laboratory at baseline and after two years. Dietary records were processed using Nutrix nutritional software with validated food composition databases (FCD), enabling micronutrient intake analysis. Results: The study did not demonstrate statistically significant correlation between dietary iron intake and key iron status biochemical parameters-serum ferritin, hemoglobin, and soluble transferrin receptor-neither in baseline nor in follow-up...
