[cze][eng] Perfluorované a polyfluorované sloučeniny (PFAS) tvoří skupinu antropogenních látek, které obsahují silnou vazbu fluoru na uhlík. Díky této vazbě vykazují vysokou stabilitu, které bylo využito v řadě odvětví průmyslu. Zdroje kontaminace a přítomnost PFAS byly globálně zaznamenány ve složkách životního prostředí. Příjem kontaminovaných potravin a pitné vody PFAS je identifikován jako významný zdroj vystavení člověka a odborná literatura varuje před jejich toxickými účinky na zdraví organismů. Vzhledem k bioakumulačním schopnostem PFAS potravním řetězcem, vrcholoví predátoři zahrnující člověka vykazují nejvyšší koncentrace. Konzumace ryb a mořských plodů značně zvyšuje koncentrace PFAS v lidské populaci. Due to this bond, they exhibit high stability, which has been utilized in various industrial sectors. Sources of contamination and the presence of PFAS have been globally detected in environmental components. The intake of contaminated food and drinking water has been identified as a significant source of human exposure, and scientific literature warns about their toxic effects on the health of organisms. Due to the bioaccumulative properties of PFAS in the food chain, top predators, including humans, show the highest concentrations. The consumption of fish and seafood significantly increases PFAS concentrations in the human population. Key words: PFAS, food, contamination, risks to human health
