[cze][eng] Bakalářská práce se zabývá přírodními toxiny v ovoci a zelenině a jejich vlivem na lidský organismus. Práce je literární rešerší rozdělenou na tři ásti. V první ásti je představena toxikologie jako vědní obor, její historie, odvětví a důležité pojmy. V druhé ásti jsou postupně představeny nejvýznamnější přírodní toxiny obsažené v ovoci a zelenině konzumovaných v eské republice, konkrétně kyanogenní glykosidy, glukosinoláty, kukurbitaciny, furanokumariny a steroidní glykoalkaloidy. U každé skupiny toxinů je popsána chemická struktura, biosyntéza, mechanismus toxicity, výskyt v ovoci a zelenině a také vliv technologického zpracování na obsah těchto toxinů. V třetí ásti se na tyto přírodní toxiny nahlíží z opané strany, jsou zde popsány jejich potenciální zdravotní přínosy podložené výsledky vědeckých studií a jejich možné terapeutické využití. The thesis is a literary review divided into three main chapters. The first chapter deals with toxicology as a scientific field, its history, branches and important technical terms. The second chapter introduces the most significant natural toxins in fruits and vegetables in the Czech Republic, specifically cyanogenic glucosides, glucosinolates, cucurbitacins, furanocoumarins and steroidal glycoalkaloids. The chapter describes the chemical structure, biosynthesis, mechanism of toxicity, occurrence in fruits and vegetables and the effect of processing on the content of these toxins for each group. The third chapter looks at these compounds from a different point of view describing their potential health benefits substantiated by results of scientific studies and their possible pharmacological utilization.
