Diplomová práce se zabývá zavedením metody kapilární elektroforézy na stanovení biogenních aminů. Teoretický blok se zaměřuje na popis biogenních aminů, jejich klasifikaci, vlastnosti, význam, výskyt a metody jejich stanovení. V experimentální části této práce byla vyvinuta a optimalizována metoda kapilární elektroforézy na stanovení vybraných aminů a získané parametry byly následně zpracovány a vyhodnoceny. The thesis deals with the development of the capillary electrophoresis method for the determination of biogenic amines. The theoretical block focuses on the description of biogenic amines, their classification, properties, significance, occurrence and methods of their determination. In the experimental part of this work, a capillary electrophoresis method was developed and optimized for the determination of selected amines, and the obtained parameters were subsequently processed and evaluated.
