Bakalářská práce je zaměřena na téma sýr. Hlavním cílem je seznámení s technologickými postupy výroby tvrdých sýrů a jejich sortimentu. U sortimentu tvrdých sýrů byly popsány jednotlivé druhy se stručnou historií, základní charakteristikou a zařazením do země původu odkud pochází. Byla rovněž popsána historie sýrů od jejich počátku začínajícím ve starověku až po současnou moderní dobu. This bachelor is focused on the theme ,,cheese''. The main objective is giving us the basic informations about the technological methods of hard cheeses productions and assortment. Some information about kind of cheeses, brief history. Main characteristics and enlistment of country of origin are describe in the part of assortment. The history of cheeses was describe from antiquity to actual modern period.
