Tato diplomová práce se zabývala sledováním texturních vlastností luštěninových snacků s přídavkem cvrččího prášku během skladování v obalu typu doypack a celofán. Z 11 receptur byl u 3 receptur proveden skladovací experiment. K měření byl použit univerzální přístroj Tiratest 27 025. Pevnost byla měřena u vzorků ihned po upečení, volných mimo původní obal 1 den při pokojové teplotě, v otevřeném obalu po 1 dni a po 1 měsíci, v uzavřeném obalu po 1 měsíci a po 2 měsících. Průměrná pevnost snacků se pohybovala od 3,79 N do 4,83 N u snacků s příchutí česneku, od 4,94 N do 7,96 N u snacků s příchutí chilli a od 4,69 N do 6,12 N u snacků s přírodní příchutí. Statistická průkaznost rozdílu byla zjištěna mezi oběma druhy obalu (p < 0,05). Vyrobené vzorky byly váženy před skladováním a po skladování, kdy mezi těmito vzorky nebyla zjištěna statistická průkaznost rozdílu. This thesis dealt with the monitoring of textural properties of legume snack with cricket powder during storage in doypack and cellophane packaging. Of the 11 recipes, 3 recipes were subjected to a storage experiment. The measuring device was used universal Tiratest 27 025. The hardness of samples was measured immediately after baking, for loose outside the original package for 1 day at room temperature, in an open package after 1 day and after 1 month, in a closed package after 1 month and after 2 months. The average strength of snacks ranged from 3.79 N to 4.83 N for garlic-flavored snacks, from 4.94 N to 7.96 N for chili-flavored snacks and from 4.69 N to 6.12 N for snacks with natural flavors. Statistical significance of the difference was found between both types of packaging (p < 0.05). The produced samples were weighed before and after storage, when there was no statistical significance of the difference between these samples.
