Tato bakalářská práce je zaměřena na rozdílné množství bioaktivních látek v kávě, vzhledem k místu pěstování kávovníků. Zrna z různých zemí vykazují rozdílné chemické složení i senzorické vlastnosti, je to dáno podnebím, půdou a technologickým zpracováním. Liší se množstvím polyfenolů, antioxidantů, kyseliny chlorogenové, a dalších složek obsažených v kávě. Vzájemný poměr těchto látek ovlivňuje spolu s pražením výslednou chuť kávy. Součástí práce je porovnání množství bioaktivních látek v kávě z různých států, získaných ze studií uvedených v literatuře. This bachelor thesis is focused on the different amount of bioactive substances in coffee, due to the place of cultivation of coffee trees. Grains from different countries show different chemical composition and sensory properties, due to the climate, soil and technological processing. They differ in the amount of polyphenols, antioxidants, chlorogenic acid, and other ingredients contained in coffee. The mutual ratio of these substances, together with roasting, influences the final taste of coffee. Part of the work is a comparison of the amount of bioactive substances in coffee in different countries, obtained from studies reported in the literature.
