Cílem diplomové práce bylo zpracovat literaturu týkající se výroby světových likérových vín, dále zjistit jaké látky se v likérových vínech mohou vyskytovat a zmapovat technologii výroby destilátů. V experimentální části se práce zabývala především senzorickým hodnocením, aby byla zjištěna vhodnost jednotlivých použitých destilátů a doby fortifikace. Dále se práce zabývala posouzením jednotlivých analytických hodnot změřených v likérových vínech v laboratoři. The aim of the diploma thesis was to adapt literature related to the manufacturing of liqueur wines of the world, as well as to determine what substances may occur in liqueur wines and to map technology of the distillates production. The experimental part of the thesis dealt mainly with sensory evaluation, in order to determine the suitability of individual distillates and time of fortification. Furthermore, the work dealt with the assessment of individual analytical values measured in the liqueur wines in the laboratory.
