Polyfenoly jsou látky obsažené ve víně, které mají různorodé vlastnosti a významně ovlivňují chuť a barvu vína. Rešeršní část se zaměřuje na popis výroby bílých a oranžových vín, typy fenolických látek a metody jejich měření. V experimentální části byl měřen obsah polyfenolů ve vzorcích pěti bílých a pěti oranžových vín, která byla vyrobena z hroznů ročníku 2018 a 2019 vypěstovaných ve vinařské oblasti Morava. Vína byla pro porovnání obsahu polyfenolů vybrána vždy v páru bílého a oranžového vína stejné odrůdy. Vína v každém páru byla vyrobena z hroznů sklizně stejného ročníku v konkrétním vinařství. Obsah polyfenolických látek byl zjištěn spektrofotometrickým měřením UV/VIS spektrofotometru pomocí Folin-Ciocalteuho činidla. Obsahy polyfenolů v bílých vínech se pohybovaly od 348 mg·l-1 GAE do 613 mg·l-1 GAE. Obsahy polyfenolů v oranžových vínech se pohybovaly od 708 mg·l-1 GAE do 1363 mg·l 1 GAE. Celkový obsah polyfenolů ve vzorcích oranžových vín je o více než 100 % vyšší než ve vzorcích odpovídajících vín bílých. Polyphenols are chemical compounds contained in wine that considerably affect the taste and color of wine. The recherche part describes the production of white and orange wines, types of polyphenol compounds and methods of their measurement. In the experimental part, the content of polyphenols was measured in 5 pairs of white and orange wine of the same variety that were produced from grapes grown in the Moravian wine region in the years 2018 and 2019. The wines in each pair were produced by the same producer in the same year. The content of polyphenol compounds was measured by UV/VIS spectrophotometry with Folin-Ciocalteu’s reagent. The content varied from 348 mg·l 1 GAE to 613 mg·l 1 GAE in white wines and from 708 mg·l 1 GAE to 1363 mg·l 1 GAE in orange wines. The polyphenol content was more than 100 % higher in the orange wine than in the white wine in each pair.
