Diplomová práce shrnuje informace o kontaminaci sušeného ovoce vláknitými mikromycetami. V práci je popsáno složení, základní rozdělení a technologie sušení ovoce. V práci jsou charakterizovány a popsány základní druhy vláknitých mikromycet. Část práce je věnována pozitivním a negativním účinkům vláknitých mikromycet. Dále se práce věnuje mykotoxinům a jejich negativním vlivům na organismus. Experimentální část se zaměřovala na detekci vláknitých mikromycet, kvasinek na vybraných vzorcích sušeného ovoce. The diploma thesis summarizes information about contamination dried fruit by micromycetes. The thesis describes the fruit composition, basic division and dried fruit production technology. The basic types of micromycetes are characterized and described in thesis. Part of the thesis described to the positive and negative effects of fibrous micromicets. The thesis also deals with mycotoxins and their negative effects on the organism. The experimental part focused on the detection of micromycetes, yeasts on selected samples of dried fruit.
