[cze][eng] Vliv macerace na obsah biogenních aminů ve víně Diplomová práce se zabývá vlivem macerace rmutu při výrobě červeného vína na obsah biogenních aminů, chemické složení a senzorické parametry vína. V literární části je popsána charakteristika biogenních aminů, požadavky a faktory ovlivňující tvorbu ve víně. Jsou zde shrnuty enologické postupy pro kontrolu biogenních aminů ve víně. Cílem experimentální části bylo zjistit jaký typ macerace má vliv na obsah biogenních aminů ve víně a chemické složení vína. U sledovaných vzorků byla zkoumána různá technika macerace. Analyticky byla hodnocena koncentrace biogenních aminů ve víně, obsah fenolických látek a hodnocen senzorický profil vín. Pokus byl proveden s modrou odrůdou Rulandské modré. Z pomletých hroznů byly založeny čtyři pokusné varianty a ty dále macerovány následovně: kontrola bez macerace, studená macerace, klasická macerace a prodloužená macerace. Každá varianta byla inokulována stejnou kulturou ušlechtilých kvasinek a mléčných bakterií a prošla malolaktickou fermentací. Z výsledků vyplývá, že technika studené macerace při výrobě červeného vína obsahovala nejmenší koncentrace biogenních aminů ve víně a může mít ochranný efekt před tvorbou biogenních aminů během malolaktické fermentace.The purpose of Thesis is to evaluate the influence of grape skin maceration practice on biogenic amine concentration, chemical composition and sensorics of final wine. The literature review describes biogenic amines, conditions, factors effecting formation in wine and summarizes enological practices in order to control its formation. Various grape skin maceration techniques were investigated in experimental part. Four experimental samples were created and were proceed with different maceration as followed: cold maceration (cold soaking before alcoholic fermentation); alcoholic fermentation in contact with grape skins (conventional maceration) and extended maceration after alcoholic fermentation. Each variant was inoculated with the same starter culture of yeast and lactic bacteria and malolactic fermentation was applied. The results show the cold maceration technique contained the lowest concentrations of biogenic amines and may have a protective effect against the formation of biogenic amines during malolactic fermentation.
