Bakalářská práce pojednává o fortifikovaných vínech vyráběných ve světě i v České republice. Literární část je věnovaná možnostem výroby, ať už jde o použitý destilát nebo termín fortifikace a dále jsou zde popsaná nejdůležitější fortifikovaná vína světa, jimiž jsou portské, sherry, madeira, málaga, marsala, commandaria a kagor. Součástí literární části je i legislativa ošetřující výrobu likérových vín v ČR včetně souvisejícího zákonu o spotřební dani a legislativa týkající se výroby likérových vín pro Evropskou unii. Experimentální část je zaměřena na srovnání vín z ČR a zahraničí, kde bylo srovnáváno 25 vín jak v oblasti chemické analýzy tak senzorického hodnocení. Jsou zde popsány i metody použité při laboratorním rozboru a jednotlivé výsledky jsou pro lepší přehlednost zpracovány formou grafů. The Bachelor thesis is focused on world and czech fortified wines. The literature review dedicates its attetion to possible methods of production, concluding the used spirit in the making of fortified wines or the timing of fortification. Later there are described the most important world fortified wines, which are port, sherry, madeira, malaga, marsala, commandaria and kagor. Important part of the literature review is also an overview of regulations of czech fortified wines, including related tax consumer laws and legislations concerning the production of fortified wine in the European Union. The experimental part compares czech and foreign fortified wines. Within the experiment 25 wines were compared chemically and sensorially. Here are also described lab methods which were used for the evaluation .Results are represented for clarity in graphs.
