Diplomová práce se zabývá hodnocením autenticity vín s označením VOC Znojmo. Apelační systém VOC Znojmo, vína originální certifikace, byl jako první v České republice zaveden ve Znojemské vinařské podoblasti v roce 2009. Práce charakterizuje a popisuje vlivy terroir na hrozny a vína. Jsou zde popsány metody, díky kterým se zjišťuje autenticita vín. Blíže charakterizuje VOC Znojmo z pohledu půdních a geologických podmínek. Jsou detailně popsány viniční tratě Volné pole, Šác a U Hájku. V praktické části je proveden analytický rozbor a senzorické hodnocení Sauvignonů z ročníku 2008 – 2016. Výsledky jsou statisticky vyhodnoceny. Daná vína zatřídilo sdružení VOC Znojmo. Výsledky senzorického hodnocení jsou navíc graficky znázorněny aromatickými profily pro intenzitu vůně a chuť. V práci jsou také popsány doporučení pro sdružení VOC Znojmo. This diploma thesis deals with evaluation of authenticity of wines with the designation VOC Znojmo. The VOC Znojmo appellation system, the original certification, was first introduced in the Czech Republic in the Znojmo wine region in 2009. The paper characterizes and describes the effects of terroir on grapes and wines. There are described the methods by which the authenticity of wines is determined. It is better characterized by VOC Znojmo from the point of view of soil and geological conditions. There are detailed descriptions of vineyard tracks Volné pole, Šác and U Hájku. In the practical part is performed analytical analysis and sensory evaluation of Sauvignons from the year 2008 - 2016. The results are statistically evaluated. The wines were classified by VOC Znojmo. Moreover, the results of the sensory evaluation are graphically illustrated by aromatic profiles for the intensity of the fragrance and taste. The thesis also describes recommendations for VOC Znojmo association.
