Tato bakalářská práce je zaměřena na vliv působící teploty na mechanické vlastnosti povrchu brambor a na metody, pomocí kterých lze měřit pevnost hlízy bramboru. Popisuje principy a postupy vybraných metod a typů vařičů, které jsou vhodné pro úpravu brambor a jednotlivá měřidla, která měří povrchovou pevnost. U jednotlivých měřidel a vařičů jsou vysvětleny, na jakém principu pracují, a jsou objasněny některé fyzikální zákony a principy. V další části práce je popsaná jedna z metod měření pevnosti slupky bramborové hlízy. Byly vybrány tři odrůdy brambor ze třech varných typů. Je zde uveden postup a popis měření na penetrometrickém přístroji. Z výsledků experimentu je patrné, že pevnost slupky syrové bramborové hlízy je vyšší než pevnost slupky bramborové hlízy po uvaření. This bachelor thesis is focused on the effect of temperature on the mechanical properties of the potato surface and on the methods by which the strength of a potato tuber can be measured. Describes the principles and procedures of selected methods and types of cookers that are suitable for the preparation of potatoes and individual meters that measure surface strength. For individual meters and cookers, the principles on which they work are explained and some physical laws and principles are clarified. The next part of the work describes one of the methods for measuring the strength of the potato tuber peel. Three varieties of potatoes from three different types were selected. The procedure and description of measurements on a penetrometric instrument are given here. The results of the experiment show that the peel strength of the raw potato tuber is higher than the strength of the potato tuber peel after cooking.
