Bakalářská práce na téma „Možnosti využití plynů v technologii výroby piva“ se zabývá plyny, které jsou využívané v technologii výroby piva. Práce je zaměřena na jednotlivé plyny, jejich charakteristické fyzikální a chemické vlastnosti. Dále je v práci popsáno využití plynů jak po stránce chemické, tak mechanické, kde jednotlivé vlastnosti plynů ovlivňují senzorické vlastnosti piva. V práci je také teoretický návrh systému, který by umožnil malým pivovarům zpětně využít oxid uhličitý vznikající během hlavního kvašení, neboť nynější systémy dostupné na trhu nejsou po ekonomické stránce pro malé pivovary vhodné. Theme of this bachelor thesis is “Possibilities in utilization of gases in beer brewing technology“ and deals with gases that are used in in beer production technology. Thesis is focused on individual gases, their typical physical and chemical properties. Furthermore, thesis describes use of gases, both in terms of chemical and mechanical, where the individual properties of gases affect the sensory properties of beer. There is also theoretical design of system that would allow to small breweries to reuse the carbon dioxide produced during the main fermentation, because current systems available on the market are not economically suitable for small breweries.
