[cze][en] V teoretické části byl popsán stručný pohled na původ, charakteristiku kávy, fáze výroby od pěstování, zběru přes metody zpracování, důležitou fermentaci až po samotné technologické zpracování zelené kávy. Dále byla pozornost v literárním přehledu věnovaná vláknitým mikromycétám (plísním), které můžou v průběhu výroby a skladování kontaminovat kávové boby. Vláknité mikromycéty jsou ubikvitárně rozšířené po celém světě. Rozmnožují se pomocí spor, které se šíří vzduchem, a proto můžou kontaminovat potraviny v průběhu procesu. Největší nebezpečí představuje produkce sekundárních metabolitů plísní- mykotoxínů. V praktické části byla vykonaná mikrobiologická analýza vzorků káv na přítomnost mikroorganizmů.The theoretical part describes a brief overview of the origin, the characteristics of coffee, the production phases from cultivation, harvesting through processing methods, and important fermentation to the technological processing of green coffee itself. Furthermore, attention in the literature review has been paid to filamentous mi-cromycetes (fungi) which can contaminate coffee beans during production and storage. Filamentous micromycetes are ubiquitously spread around the world. They are repro-duced by spores that spread through the air and can therefore contaminate food during the production process. The greatest danger is represented by the production of second-ary fungal metabolites – mycotoxins. In the practical part, a microbiological analysis was performed on the cultivation of coffee samples for the presence of microorganisms.
