Abstract: MALDI-TOF MS was used for characterization of oligosaccharides in samples of Jerusalem artichoke and red onion. Seven selected matrices were tested. The optimization of experimental conditions was carried out for three carbohydrates that are important for food chemistry ů dextran, inulin and starch (low glucose syrup).
