Antioxidanty ve vybraných odrůdách hrušní
Havlíčková, Barbora
The subject of this master´s thesis was primarily antioxidants in selected pear varieties. Among the pear varieties selected were European varieties ('Williams', 'Erica', 'Electra', 'Beta', 'Conference'), Asian varieties ('Kumoi', 'Ju Li', 'Nijiseiki', 'Shinko') and Asian-European hybrid variety 'Benita'. The content of individual antioxidants in the varieties was determined using the HPLC-MS/MS method. The resulting values were processed into graphs in the Excel program and statistically evaluated using the Statistica program. As part of the cluster analysis, the samples were divided into two groups based on the analysis of antioxidant content. The similarity of the 'Benita' variety hybrid to European varieties was also found. Using the PCA method, the data were divided into four groups. The highest content of total antioxidants was determined in the hybrid 'Benita' (2175,11 μg/g), on another hand, the lowest was in the European variety 'Williams' (277,73 μg/g). Some Asian varieties contained more antioxidants than European ones, while others contained less. It was found that the varieties analysed contained the most procyanidin b1/b2, while procyanidin c1 was not detected in any of the varieties. In the next part of the master´s thesis the development of the pear industry in the Czech Republic was monitored, where the development of the price level and harvest, the average yield, the consumption of pears per inhabitant of the Czech Republic, a foreign trade, a comparison of EU+UK production were monitored According to the obtained data, the 'Conference' variety and the 'Lucas' variety were the most cultivated in the Czech Republic. Annual consumption per person varied between 2,5-3 kg. Compared to the most other EU members and Great Britain, the pear production in the Czech Republic was low (4000-10000 tons/year).
Application of spectral and non-spectral analytical methods for monitoring the quality of ketchups
Havlíčková, Barbora ; Vítová, Eva (referee) ; Diviš, Pavel (advisor)
The aim of the master´s thesis was to verify the applicability of elemental analysis and molecular spectrometry for examining the authenticity of ketchup. For verify of share refractometric dry matter introduced into ketchup from tomatoes was used analysis of potassium and lycopene content. Ketchups with different tomato contents were prepared and subsequently models were created, which were used to verify the proportion of refractometric dry matter introduced into tomato ketchup in ketchups from the store. The results of the work showed that the amount of lycopene is a problematic marker for verifying the authenticity of ketchup, because during the production of ketchup, lycopene is degraded. In contrast, the amount of potassium in ketchup has been shown to be a good marker for monitoring the authenticity of ketchup. The model based on the potassium content of ketchup worked reliably, the deviations obtained from the quantity of tomatoes used for the production of ketchup indicated on the packaging were less than 10%. Higher deviations were achieved in ketchups with a minimum permitted tomato content of up to 20%. The concentration of potassium in ketchup with a lower content of used tomatoes can be significantly affected by the addition of other ingredients to the ketchup (onion, garlic, carrot, apple, etc.). In addition to the ketchup production technology used, the ripeness of tomatoes also has a significant effect on the model for verifying the authenticity of ketchup.
Trunk anthropometric parameters by patients with chronical back pain and by healthy population
Havlíčková, Barbora ; Kobesová, Alena (advisor) ; Bitnar, Petr (referee)
The aim of this study is to compare anthropometric parameters of the trunk between a group of patients with low back pain and a control group without pain. These findings would support the theory that low back pain may be caused by non-ideal postural-locomotion development in childhood, resulting in measurable morphological variations in adulthood. 60 individuals with low back pain (patients) and 60 healthy volunteers (controls) participated in the study. It was confirmed that the distance between the jugular fossa and xiphoid process is shorter in relation to the body height in the group of patients versus the control group. Conversely, there was a significantly longer distance between the xiphoid and symphysis relative to the body height among the patients. Furthermore, diastasis of rectus abdominis muscle was observed more frequently in the low back pain group. These findings suggest that patients with low back pain present with trunk morphological differences when compared with a matching healthy group. Keywords Low back pain, jugular fossa to xiphoid process distance, xiphoid to symphysis distance, rectus abdominis muscle diastasis, motor development, morphology, anthropometry
Study of the antioxidative potential of selected fruit marcs
Havlíčková, Barbora ; Zemanová, Jana (referee) ; Vespalcová, Milena (advisor)
Subject of this bachelor thesis was antioxidant activity of selected kind of fruits. Among selected kinds were the marc of red and white grapes, moldings from red elderberry and aronia. Two species of made capsules from marcs of white grapes and aronia were also subjected to analysis. Results of this bachelor thesis are summarized to four chapters. The first chapter compares the water content of drying at 40 ° C and 105 ° C. In the second chapter, the results of extraction in different proportions of solvent mixture ethanol - water and results of extraction in prepared artificial gastric juice are discussed. As a result, the water – ethanol mixture was a more effective solvent than artificial gastric juice. The third chapter deals with the results and discussion of the determination of the total content of phenolic substances. For the solvent mixture, the largest amount of polyphenols in the red vine marc was determined to be 43,56 mg.g-1, while in gastric juice the largest content in the elderberry was determined to be 11,89 mg.g-1. Capsules were also extracted in gastric juice, and 2,53 mg.g-1 was found in aronia tablets, while 5,93 mg.g-1 in white grape tablets. The last chapter compares the results of TAA measurements using the TEAC and EPR methods. The EPR method was more suitable for much diluted solutions than the TEAC method. The results of this work show that there is a large number of polyphenols and other antioxidants in the moldings that affect the overall antioxidant activity. Marcs have great potential for use as natural dyes or can be used to make a food supplement.
