The thesis entitled „Quality parameters of mayonnaise with additives“ aimed to perform model production of mayonnaise samples according to different recipes (combination of additives – lactic acid, citric acid, sodium sulphate) with different levels of additives and to determine the basic quality characteristic (pH, dry matter content, titratable acidity content) and sensory properties. The pH of model samples ranged from 3.52 (sample with citric acid and lactic acid combination) to 4.03 (sample with lactic acid). The dry matter content ranged from 53.59 % (sample with sodium sulphate and lactic acid) to 59.86 % (sample with citric acid). The titratable acidity content of the model samples ranged from 42 mmol·l−1 (sample with lactic acid) to 56 mmol·l−1 (sample with citric acid). In the sensory analysis, the sample with combination of citric acid and lactic acid got the best results. The results obtained confirm that the additives in the mayonnaise did not have a negative effect on the quality and sensory characteristics.

Blažeková, L. The satisfaction of foreign visitors in destination South Moravia. Bachelor thesis. Brno: Mendel University in Brno, 2023. The bachelor thesis focuses on the analysis of satisfaction factors in the tourist destination Jižní Morava. A face-to-face field research was conducted in 5 areas of the region of South Moravia. The questionnaire survey took place in the months of June to September 2022 to collect primary data, of which 370 questionnaires were used for the purpose of this work. The aim of the work is to compare the satis-faction in the areas of Brno and surroundings, Slovácko, Pálava and Lednice-Valtice Area, Moravian Karst and Znojemsko and Podyjí. Furthermore, the correla-tion of the rating of overall satisfaction with the rating of individual factors was examined. On the basis of the research results, suggestions for improving the factors causing visitor dissatisfaction are made.

Žemličková, I. Consumer perception of private labels. Diploma thesis. Brno: Mendel University, 2023. The diploma thesis discusses how private labels are perceived by consumers. It focuses on consumer behavior in the private label food market, more specifically it examines the factors that motivate customers to buy. In the thesis, the reader will get acquainted with the basic terms and a summary of what has been researched on this problem so far. Subsequently, the consumer's view of private labels is investigated using a questionnaire survey. The results show that there is a change in their perception, as private labels are considered to be of higher quality than before. Consumers are also relatively aware of the presence of private brands in the store, which are associated with a low price. The results serve to determine recommendations for retailers to increase awareness of private labels.

Kacetlová, D. Visitor satisfaction and quality of tourism destination. Diploma thesis. Brno: Mendel University, 2023. This diploma thesis deals with the evaluation of visitor satisfaction and the quality of the tourism destination Znojemsko and Podyjí. The main goal of the thesis is based on the identification of factors influencing the overall satisfaction of visitors to deduce a proposal for recommendations and measures for the destination management of Znojemsko and Podyjí to systematically increase the quality and satisfaction of destination's visitors. The research used a questionnaire survey with visitors directly in the destination, the obtained data were subjected to regression analysis.

In the theoretical part, this diploma thesis briefly describes the origin and processing of honey. Then, some of its physical and chemical properties are characterized, focusing on the methods of their determination. The work also focuses on the effects of honey on human health and its possible applications in the treatment of various diseases, and finally with a brief presentation of other bee products. In the practical part, an analysis of selected physical and chemical properties (water content, titratable acidity, active acidity, colour, glucose content, proline content) of honey samples obtained from the market was performed. The results of the determination were compared with the values set by the legislation. A sensory evaluation was also carried out for the overall assessment. Finally, a statistical comparison of individual results was also performed.

The subject of this bachelor thesis is regional meat producers. The first part of the literature search deals with the quality regimes of the European Union and the Czech Republic. Both positive and negative aspects of the labelling systems in their impact on producers, consumers and the environment are presented. The environment is the main reason for the introduction of this sustainability strategy. The link to a particular place is also important, as is the tradition that consumers associate with higher quality products. The second part of the thesis thus focuses on the production of pâté according to the Czech Guild Standard, which refers to traditional and honest processing technology. The technological process is related to economic, hygienic and sensory quality.

This bachelor thesis focuses on the quality mark Verified Public Benefit Organization (also known as the Reliability Mark), specifically its acquisition process, the significance of the mark, and its position in the market. The Reliability Mark is a prestigious award for nonprofit organizations, as it thoroughly examines them and guarantees to society that they are trustworthy, reliable, fulfill their mission properly and effectively manage entrusted financial resources. This mark is managed by the Association of Public Benefit Organizations of the Czech Republic. The thesis is divided into theoretical and practical parts. The theoretical part is presented in the form of a literature review using books and internet sources. Data collection necessary for the practical part was conducted through questionnaire surveys involving respondents who are both holders of the mark and potential or regular donors from the general public. Furthermore, a qualitative semi-structured interview was conducted with one of the co-founders of Temperi o.p.s., a non-profit organization which receives significant attention in this bachelor thesis. Lastly, a SWOT analysis was created. Through induction and deduction, a final conc lusion was reached - specifically an evaluation of the current state of the mark and proposed changes. The findings indicate that obtaining the Reliability Mark is financially, and administratively time-consuming; therefore, only non-profit organizations operating at a professional level can acquire it. This mark holds prestige for non-profit organizations as recognition for their high-quality work rather than solely attracting donors. Additionally, it was found that awareness about this reliability mark among the general public is insufficient, which poses so mewhat problematic, since it has potential to serve as an excellent tool for donors when se lecting supported non-profit organizations.
Care for managers in a helping NGO

The objective of this thesis is to describe and research a specific area of care for employees, which is care for managers in an NGO provider of (mainly) social services. There is evidence from research that shows the effects of managers' behaviour on the quality and quantity of organisational performance therefore, this thesis focuses on the conditions organisations (can) create for good quality performance of line managers. The theoretical basis for this text is the ethics of care, mainly some of the books of Joan Tronto (2010, 2013), which is interlinked with selected books on management (in general as well as specialised on social service providers). The second part of this thesis is a description of participative action research that focuses on the practice of care for managers in one organisation. The research, together with line managers, describes practice and suggests changes based on the gained knowledge and the theoretical basis of this text. This practical example shows possible application of the principles of democratic caring practice in the management of an NGO - especially provider of social services. Quality assurance in the production of lubrication aggregates

This bachelor thesis is focused on quality assurance of lubrication aggregates in the company Tribotec, spol, s.r.o. The main objective is to propose a solution leading to the reduction of the number of non-conforming pieces in production by applying quality assurance tools. The introductory chapters describe the basis of quality management, quality assurance of lubrication aggregates in the cooperating company and the quality tools used to reduce non-conforming pieces. The application of these tools is based on two weeks of observation. The next section includes a description of the technical equipment and an analysis of the lubrication aggregate manufacturing process. The main contribution of this paper is a suggestion for process modification in the assembly of lubrication units. The proposed measures led to a reduction in the number of non-conforming pieces.
Release Process Design of Standardized Parts to Serial Production
