Non-fish prey in the diet of fish-eating mammals, Eurasian otter (Lutra lutra) and mink (Neovison vison)

The Eurasian otter (Lutra lutra) is considered, along with the American mink (Neovison vison), a significant fish predator not only in the Czech Republic but also in other regions across Europe. One of the goals of this study is to determine, based on available literature, the types of prey that form the diet of the Eurasian otter and the American mink, specifically focusing on the non-fish component of their food and how the percentage representation of these items changes in the diet of both species depending on habitat and season. Another objective is to verify whether the American mink has a higher proportion of non-fish prey in its diet compared to the Eurasian otter. The processed data describing the diet through spraint analysis in biomass units were divided according to climatic regions, i.e., temperate, Mediterranean, and also based on the type of aquatic environment, i.e., stagnant or flowing water. The results of the study indicate that the American mink consumed, on average, three times more non-fish prey (74 % biomass) throughout the year than the Eurasian otter (24 % biomass). The seasonal variation had the most notable impact on the consumption rate of frogs and birds in the non-fish diet of both predators. The bachelor thesis Factors influencing phthalate accumulation in food has the character of a literature search and deals with factors that influence phthalate migration into food. Phthalates are lipophilic organic compounds that are used to soften plastics. As a result of human activities, they enter the environment, from which they subsequently enter the human food chain. However, food contamination also occurs during production and storage. Factors that influence the migration of phthalates into food include the contact time of the food with the polymer, storage temperature, ultrasound, pH of the food, UV radiation, type of preservative, and composition of the packaging material and food. Phthalates have negative effects on human and animal health. They cause reproductive disorders, allergic reactions, immune system disorders, cardiovascular problems and are carcinogenic.

The bachelor thesis deals with the resistance of microorganisms to antimicrobial agents and its subsequent spread in the food chain. It focuses mainly on the resistance of microorganisms to antibiotics, in relation to the types of antibiotics according to their chemical structure and their mechanism of action. It describes the basic principles of agents used against viruses, yeasts, fungi and parasites. Characterises the nature of the emergence and mechanisms of resistance. It also discusses the methods used to determine the resistance of microorganisms to antimicrobial agents. Describes when resistance of microorganisms began to emerge historically and its occurrence in different sections of the food chain. In relation to the spread of antimicrobial resistance in the food chain, it describes the most serious zoonotic agents today.

Conventional food packaging materials face incoming innovations with intention to increase the sustainability of packaging industry a to extend the shelf life of food. Theoretical thesis focuses on describing all the possible groups of packaging materials and the current legislation required. Special attention is given to active, intelligent and edible packaging. The review concludes with information about food packaging safety and its impact on consumer health. Bisphenol A, melamine, formaldehyde or phthalates belong to the substances restricted in recent years. In this point of view the food packaging safety is limited by the amount of toxicological data and migration studies. Edible packaging brings solution for extending shelf life of food, most promising results have been found in delaying microbial spoilage and maintaining sensory properties of foodstuff for longer period of time. For practical applications European union still lacks any regulations.

This bachelor’s thesis focuses on food waste management, which is closely related to global climate change, overpopulation and food waste. The aim of this thesis is to complete legislative regulations related to this topic and to define how food waste is categorized and at that stage, food is discarded. This thesis also deals with selected processing and mentions sustainable food consumption and food labelling. The research used a mapping method to verify whether gastronomic establishments comply with legal regulations and have designated special containers for food waste and waste collection companies. Another method used was an interview with a freegan and subsequently with a gastronomic establishment employee. The mapping research revealed that an unsuitable time was chosen for the mapping. The main finding from the interviews was that some gastronomic establishments are open to new trends in reducing food waste. Despite increasing demands for legislative regulations on food waste disposal, the main takeaway from the interviews was that it is possible to consume only discarded food.

Barančicová, T. Consumer behaviour on the private label market. Diploma thesis. Brno: Mendel University, 2023. The diploma thesis is dealing with consumer behaviour on the private label market. It also focuses on consumer behaviour on the private label food market in the online environment. The goal of the thesis is to identify factors influencing behaviour on the private label market based on the results of the author's own survey and to divide consumers into individual segments with the help of a clus-ter analysis. Two segments resulted in this thesis are conservative consumers and 21st century consumers. Finally the series of recommendations for the supply side of the market is presented. Recommendations include a blind test, a focus on quality, events with free shipping or benefits when paying by card.

This bachelor thesis deals with the use of edible insects material in the food industry. Around 2000 edible insect species have been recorded worldwide and are commonly consumed in Africa, Asia and Oceania. In recent years, edible insects have also become a major topic of discussion in the Western world. In the European Union, legislative steps have been taken to categorise certain species of the edible insects as food. On the European market, products made from the yellow mealworm, the house cricket, the migratory locust and the lesser mealworm can be found. These edible insects are a rich source of protein, fat, vitamins and minerals. It also contains the fibre chitin which is associated with lower digestibility of insect products and may also act as an allergen. Some nutritional substances may be subject to the development of innovative technologies. For example, proteins from the migratory anemone have the potential for the development of edible packaging or chitin fibre may be another alternative source to obtain chitosan.

Tereza Stöckelová, Ph.D. Abstract: The diploma thesis offers ethnographic insights into the black box of school canteens. It follows heterogeneous actor-networks that emerge in the processes of planning, preparation, serving, consumption and disposal of food. It shows that the current (problematic) quality of school dining is not the fault of either unwilling cooks or picky diners, but is the result of negotiations between different norms of what "good food" actually is. Using the concept of ontonorms the thesis asks what values and beliefs uphold specific eating practices and how these norms establish different categories of foods and bodies. It also asks who or what, for whom and in which contexts mobilizes different registers of valuing. The thesis draws upon data from research in six school canteens, and the "Vaření" (Cooking) project in a Montessori school, training for cooks as part of the "Máme to na talíři" (We have it on our plate) project and the online environment of websites representing these projects and canteens.
