Tato literární rešerše se dopodrobna zabývá kvalitou řepkového oleje v závislosti na dědičných a nedědičných faktorech. Spotřeba řepkového oleje každým rokem stoupá a kromě využití ve výživě lidí se zpracovává i v krmivářském průmyslu či jako biopalivo pro motorová vozidla. V řepkovém oleji má velké zastoupení zejména kyselina olejová. Dále se v něm nachází kyselina linolová a linolenová a nežádoucí kyselina eruková, jejíž množství je značně redukováno. Je podstatné zmínit i obsah glukosinolátů, jako antinutričních látek, které se spolu s kyselinou erukovou redukují a vzniká řepkový olej typu 00. Všechny tyto složky jsou v práci podrobně popsány. Obsah mastných kyselin v řepkovém oleji mohou ovlivňovat jak faktory genetické, tak faktory environmentální. Selekce hraje při šlechtění značnou roli. Vhodným výběrem správných genotypů spolu s vlivy vnějšího prostředí můžeme dosáhnout požadovaného cíle. Důležitou roli zde hraje i syntéza mastných kyselin, kde pomocí desaturačních enzymů řady fad, dochází k desaturaci kyseliny stearové na kyselinu olejovou, linolovou a linolenovou. Pomocí metody QTL je možné detekovat genové pozadí kvantitativních znaků. Hlavní geny zodpovídající za kvalitu řepkového oleje se nachází na chromosomech A, konkrétně A1, A3, A5 a A8, které jsou v práci zmíněny. This literature review study quality of rapeseed oil in details, depending on heritable and non-heritable factors. Consumption of rapeseed oil is growing every year and in addition to use in human nutrition is also used in animal feed industry or as fuel for motor vehicles. The rapeseed oil has especially a large representation of oleic acid. Furthermore, it is linoleic acid and linolenic acid and undesirable erucic acid, whose quantity is considerably reduced. It is important to mention glucosinolate content, as antinutritional substances, which is reduced together with erucid acid which is known as "00" rapeseed oil. All these components are described in details in this review. The content of fatty acids in rapeseed oil may be influenced both genetic factors and environmental factors. Selection plays a significant role in breeding. Suitably selecting the correct genotypes along with environmental influences can reach the desired target. An important role is played by the synthesis of fatty acids, where in using a desaturation enzymes of fad series, there is desaturation of stearic acid to oleic acid, linoleic acid and linolenic acid. With QTL method, it can be detected genetic background of quantitative traits. Major genes responsible for the quality of rapeseed oil are located on the chromosome A, namely A1, A3, A5 and A8, which are mentioned in the work.
